My Tho noodle soup
My Tho noodle soup is a famous brand in the southern region, which is served for either breakfast, lunch or dinners, being highly familiar to residents in the western part of Vietnam’s southern region.
Ingredients of the soup include shrimp, pork ribs, minced meat, quail eggs, rice noodles, broth and served with fresh bean sprouts, celery, fried onions, chili, pepper… The special feature is that the noodles are small, dry, tough, crunchy, with mildly sour taste. They are made from Go Cat rice in My Phong commune of My Tho city in the Mekong Delta province of Tien Giang.
In addition to the typical noodle, the dish would also impress passengers by its sweet, aromatic and rich broth cooked from pork bones, dried squid, dried shrimp, white radish and some other ingredients.
However, the process of preparing the noodle aboard an airplane is quite different from cooking on the ground. Vietnam Airlines chefs have had to spend much effort on researching and testing processing methods to ensure the toughness and crunchiness of the noodles. The taste of the dish is also processed in a way to retain the very characteristics as if it is cooked on the ground.
Canapé dishes
Canapé consists of small but delicate servings with slices of crispy toast topped with premium ingredients such as Parma ham, smoked salmon, country paste, fresh Mozzarella cheese with a variety of sauces including Pesto, butter cream sauce and Tartar.
A small piece of canapé can be made from more than 10 ingredients, all blended perfectly to create a highly special finger food fit in just one bite. With their creativity, Vietnam Airlines chefs have built a menu of rich canapé dishes, reminiscent of European, gentle but luxurious flavors.
Both above dishes are currently being served to Business Class passengers on select routes and depending on flight time.
